Ingredients

  • 40 crushed Ritz crackers
  • 2 c. chopped nuts
  • 1 c. white sugar
  • 1 c. brown sugar
  • 2 tsp. vanilla

Instructions

  1. Mix together crushed Ritz crackers, chopped nuts, white sugar, brown sugar, and vanilla; set aside.
  2. Beat 6 egg whites until stiff peaks form.
  3. Fold the beaten egg whites into the dry mixture until well combined.
  4. Spoon the batter into a mini muffin pan.
  5. Bake at 350°F (175°C) for 10 to 15 minutes.
  6. Cool before removing from the pan.
