Mint Roasted Onions

Sweet roasted onions infused with mint and oregano, drizzled with a tangy vinegar glaze, perfect as a flavorful side for Mediterranean-inspired meals or gatherings.

Ingredients

  • 2 medium onions
  • 2 1/2 Tbsp. white wine vinegar
  • 2 Tbsp. water
  • 1 Tbsp. olive oil
  • 3/4 tsp. sugar
  • 1/2 tsp. dried mint, crushed
  • 1/2 tsp. dried oregano, crushed
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Line the bottom of an 8-inch square baking pan with foil.
  3. Cut onions in half crosswise and remove skins.
  4. Place onions, cut side down, in the prepared pan.
  5. Whisk together white wine vinegar, water, olive oil, sugar, dried mint, dried oregano, salt, and pepper in a small bowl until blended.
  6. Drizzle the mixture over the onions and swirl to coat them evenly.
  7. Bake uncovered for 1 hour or until tender and golden brown.
  8. Baste the onions with pan drippings three times during baking.
