Mint Roasted Onions

- Preheat oven to 400°F (200°C).
- Line the bottom of an 8-inch square baking pan with foil.
- Cut onions in half crosswise and remove skins.
- Place onions, cut side down, in the prepared pan.
- Whisk together white wine vinegar, water, olive oil, sugar, dried mint, dried oregano, salt, and pepper in a small bowl until blended.
- Drizzle the mixture over the onions and swirl to coat them evenly.
- Bake uncovered for 1 hour or until tender and golden brown.
- Baste the onions with pan drippings three times during baking.
