Mixed Beans With Breadcrumbs

Ingredients

  • 1 tbsp vegetable or olive oil
  • 1 None large red onion, thinly sliced
  • 2 tbsp butter
  • 3 cloves garlic, crushed
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tbsp mustard powder
  • 6.5 oz fresh breadcrumbs
  • 1 lb frozen edamame soy beans, thawed, peeled
  • 7 oz green beans, chopped

Instructions

  1. Heat oil in a large frying pan over moderate heat. Add onion. Cook, stirring, 2-3 minutes or until softened slightly. Transfer onion to a plate.
  2. Heat butter in pan. Add garlic, turmeric, cumin and mustard powder. Cook, stirring, 30 seconds, or until fragrant. Add breadcrumbs. Cook, stirring, 4-5 minutes or until breadcrumbs are golden.
  3. Bring a medium saucepan of water to a boil. Add beans. Cook 2-3 minutes, or until tender. Drain.
  4. Place beans on a serving plate. Top with breadcrumb mixture. Serve immediately.
