Ingredients

  • 1 1/2 cups sugar
  • 2 teaspoons cream of tartar
  • 20 Ritz crackers
  • dash of cinnamon
  • 2 cups water
  • 2 tablespoons lemon juice
  • butter
  • unbaked pie shell

Instructions

  1. Boil water, sugar, and cream of tartar for 2 minutes.
  2. Drop in 20 Ritz crackers without stirring and boil for 1 minute longer. Remove from heat and add lemon juice.
  3. Let the mixture cool.
  4. Pour into an unbaked pie shell.
  5. Dot with butter and sprinkle with cinnamon.
  6. Bake in a 300°F oven for 30 minutes.
