Creamy eggs benedict with Canadian bacon, topped with cheese sauce and chives, served on toasted English muffins, perfect for brunch or a special breakfast.

Ingredients

  • 4 English muffins
  • 16 slices Canadian-style bacon
  • 8 eggs
  • 4 Tbsp. milk
  • dash of pepper
  • 2 Tbsp. butter or margarine
  • Cheese sauce
  • 4 tsp. snipped chives
  • tomato wedges

Instructions

  1. Split and toast the English muffins.
  2. Cook the Canadian-style bacon until heated through and slightly browned.
  3. In a bowl, whisk eggs, milk, and pepper together.
  4. Cook the eggs mixture in a skillet or microwave until set, then assemble the eggs benedict.
  5. Top each muffin half with a slice of Canadian bacon.
  6. Place the cooked eggs on top of the bacon.
  7. Prepare cheese sauce and spoon over the eggs.
  8. Garnish with snipped chives and tomato wedges.
