Ingredients

  • 1 gal. peeled, seeded and sliced large cucumbers
  • 1 c. lime
  • 4 1/2 c. water
  • 1/2 c. vinegar
  • 2 tsp. red food coloring
  • 1 1/2 c. alum

Instructions

  1. Soak cucumber slices in the water and lime mixture for 24 hours. Rinse well.
  2. Soak the cucumber slices in clear water for 3 hours; drain.
  3. Add vinegar, food coloring, alum, and enough water to cover cucumbers. Simmer for 2 hours and drain.
  4. Heat 2 cups vinegar, 2 cups water, 1 cup red hots, 7 cups sugar, and 4 cinnamon sticks until the red hots melt.
  5. Pour the hot mixture over the cucumber slices and let stand overnight.
  6. Reheat the mixture and pack into jars.
  7. Process the jars for 15 minutes in boiling water.
