- Add the thick cream, reduce flame to low heat (265°) and continue cooking until a sample makes a hard ball when put in cold water.
- Add the soda and beat until thick.
- Pour onto a buttered platter.
- As edges cool, turn into the center.
- When cool enough to handle, pull until light-colored and stiff enough to hold its shape.
- Cut into small pieces.
