Molded Rice Pudding

Molded rice pudding combines creamy rice with rich chocolate and a hint of wine, topped with airy egg whites—an elegant dessert perfect for special occasions or cozy gatherings.

Ingredients

  • 1 c. Arborio rice
  • 3 c. milk
  • 4 eggs
  • 6 oz. semi-sweet chocolate
  • 3 oz. butter
  • 1/2 c. superfine sugar
  • 2 Tbsp. superfine sugar
  • 1/2 c. red currant jelly

Instructions

  1. Bring a saucepan of salted water to boil.
  2. Add rice and cook for 5 minutes; drain.
  3. Return rice to saucepan, add milk, and cook over low heat until all liquid is absorbed.
  4. Beat the egg yolks with 1/2 cup sugar until light and fluffy.
  5. Melt the chocolate and butter together in a heatproof bowl set over simmering water.
  6. Beat the egg whites to stiff peaks, gradually adding 2 tablespoons sugar.
  7. Combine the cooked rice with the melted chocolate mixture.
  8. Fold in the beaten egg yolks and white wine.
  9. Gently fold in the egg whites until well combined.
  10. Pour the mixture into a mold and chill until set, about 2 hours.
