A traditional Finnish coffee bread with aromatic cardamom, sweet raisins, and almonds, braided into beautiful loaves—perfect for sharing with friends and family over coffee.

Ingredients

  • 1/2 quart warm water
  • 1/2 quart eggs at room temperature
  • 1/2 pound melted butter
  • 1/2 pound sugar
  • 1/2 ounce baking soda
  • 1 ounce dry yeast
  • 1/2 tablespoon ground cardamom
  • raisins (optional)
  • chopped almonds (optional)

Instructions

  1. Mix all ingredients together until well combined.
  2. Knead the dough thoroughly until smooth and elastic.
  3. Allow the dough to rise until it has doubled in size.
  4. Knead the dough again briefly.
  5. Divide the dough into three strips and braid them into 12-inch loaves.
  6. Brush the loaves with beaten eggs immediately before baking.
  7. Sprinkle the loaves with sugar and chopped almonds (if using).
  8. Bake at 350°F (175°C) until golden brown, about 25 minutes.
  9. Remove from oven and brush with a little sugar water while still warm.
