Mom'S Concoction
Ingredients
- skinless chicken, cooked ⓘ
- 1 green pepper, sliced ⓘ
- 2 stalks celery, sliced ⓘ
- 2 tomatoes, chopped
- 1 onion, finely chopped ⓘ
- 1 can pineapple chunks ⓘ
- pineapple juice from can ⓘ
- 1/2 c. water ⓘ
- 2 or 3 Tbsp. taco seasoning ⓘ
- Cheddar cheese, grated ⓘ
- 1 c. sour cream ⓘ
- 1 can olives, sliced ⓘ
- 1 jar salsa ⓘ
Instructions
- In saucepan cook green pepper, celery, tomatoes and onion in pineapple juice.
- Add cooked chicken chunks and pineapple pieces. Stir in water and taco seasoning.
- Heat through, cover and simmer until cooked, stir fairly frequently.
- Add more water if necessary.
- Serve as you would regular tacos.
- Use cheese, sour cream, olives and salsa as extras with the meat filling in the shells.
