Ingredients

  • 6 Tbsp. apple cider vinegar
  • 3 Tbsp. flour
  • 1 1/4 c. water
  • 1/4 tsp. salt
  • 1 tsp. lemon extract
  • 3 egg yolks
  • meringue
  • 1 baked pie shell

Instructions

  1. Combine apple cider vinegar, flour, water, salt, and lemon extract in a saucepan.
  2. Beat egg yolks and blend them into the mixture in the saucepan.
  3. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  4. Boil and stir for 1 minute.
  5. Remove from heat and pour into a baked pie shell.
  6. Top with meringue and brown in the oven.
