Mom'S Zucchini Jam

A sweet and tangy zucchini jam infused with pineapple and lemon, perfect for spreading on toast or using in desserts, offering a refreshing twist on traditional jams.

Ingredients

  • 6 cups zucchini, peeled and grated
  • 2 cups water
  • 6 cups sugar
  • 1/2 cup ReaLemon juice
  • 1 cup crushed pineapple

Instructions

  1. Combine water and grated zucchini in a pot and bring to a boil.
  2. Boil for 6 minutes then drain well.
  3. Add sugar, ReaLemon juice, and crushed pineapple to the zucchini mixture.
  4. Mix well and boil for an additional 6 minutes.
  5. Remove from heat and add Jell-O, stirring until well combined.
  6. Pour the jam into jars or freeze for storage.
