Cranberry Cabbage Salad

A refreshing cranberry cabbage salad with sweet honey, aromatic spices, and tangy grapefruit juice, perfect for light lunches or holiday gatherings with vibrant flavors and crunch.

Ingredients

  • 4 c. shredded white cabbage
  • 1/2 c. grated carrot
  • 1 small apple
  • 1 1/2 tsp. honey
  • 1/4 tsp. ground marjoram
  • 1/2 tsp. ground anise seed
  • 1 c. frozen cranberries, no sugar added
  • 1/2 c. grapefruit juice

Instructions

  1. Combine shredded cabbage and grated carrot in a large bowl.
  2. In a separate small bowl, mix grapefruit juice, honey, ground marjoram, and ground anise seed to make the dressing.
  3. Pour the dressing over the cabbage mixture and toss until well combined.
  4. Cover and chill the salad for 1 to 2 hours.
  5. Just before serving, grate the small apple and add it along with the partially thawed cranberries to the salad.
