Ingredients

  • 1 1/2 cups sour milk or 1 tablespoon vinegar in regular milk
  • 1 1/2 teaspoons soda
  • 1/2 cup sugar
  • 2 tablespoons shortening or 2 1/2 tablespoons oil
  • 1/2 cup cornmeal
  • 1 1/4 cups flour

Instructions

  1. Preheat the oven to 350° to 400° F.
  2. Mix the sour milk (or vinegar in milk), soda, sugar, shortening (or oil), cornmeal, and flour together until well combined.
  3. Pour the batter into greased muffin tins or a 7 x 10-inch pan.
  4. Bake in the preheated oven until the Johnnycakes are golden and cooked through, approximately 20 minutes.
