Mother's Prune Pie combines tender prunes and crunchy nuts in a sweet filling, baked to perfection in a flaky pastry shell, perfect for a comforting dessert or teatime treat.

Ingredients

  • 1 cup pitted prunes
  • 1/2 cup chopped nuts
  • 1/2 cup white granulated sugar
  • 2 beaten egg whites
  • 1 baked pastry shell

Instructions

  1. Cook prunes with a little water until soft.
  2. Mash the cooked prunes fine and add the chopped nuts.
  3. Beat the egg whites until stiff, then gradually add the sugar and beat well again.
  4. Fold the prune and nut mixture into the whipped egg whites.
  5. Pour the filling into the baked pastry shell.
  6. Bake very slowly for about 25 minutes.
  7. Serve with a generous dollop of real whipped cream.
