Ingredients

  • 2 gal. fresh goat milk
  • 1 c. buttermilk
  • 2 Rennet tablets
  • salt

Instructions

  1. Pour the fresh goat milk into a large pot and heat it slowly to about 190°F.
  2. Remove the pot from heat and stir in the dissolved rennet tablets.
  3. Let the mixture sit undisturbed for about 10 minutes until it curdles.
  4. Cut the curds into small pieces and let them sit for another 5 minutes.
  5. Gently heat the curds to 105°F while stirring slowly.
  6. Remove from heat and drain the curds, reserving some whey.
  7. Add salt to the curds and knead gently until smooth and elastic.
  8. Form the cheese into balls and place in cold water to set.
