- Pour the fresh goat milk into a large pot and heat it slowly to about 190°F.
- Remove the pot from heat and stir in the dissolved rennet tablets.
- Let the mixture sit undisturbed for about 10 minutes until it curdles.
- Cut the curds into small pieces and let them sit for another 5 minutes.
- Gently heat the curds to 105°F while stirring slowly.
- Remove from heat and drain the curds, reserving some whey.
- Add salt to the curds and knead gently until smooth and elastic.
- Form the cheese into balls and place in cold water to set.
