Ingredients

  • 1.5 lb small, firm zuchini, grated (4 cups)
  • 1 bunch scallions, trimmed\finely chopped. white parts only (.5 cup)
  • 2 Tablespoons finely chopped dill
  • 2 tablespoons finely chopped parsley
  • 3 eggs
  • 1 tablespoon paprika
  • salt\pepper
  • 8 ounces beyaz peynir (1 cup)
  • 1 cup flour

Instructions

  1. Place grated zucchini in colander, sprinkle w/ salt and let drain for 15 minutes
  2. Squeeze out excess water and place in large bowl with SCALLIONS, DILL, PARSLEY, EGGS, PAPRIKA. Mix well
  3. Season with salt\pepper
  4. Stir in cheese and flour a little at a time, incorporate well
  5. Heat oil in skillet, then lower heat to medium
  6. Drop a tablespoon of batter to fry. do not crowd. Fry until golden brown (about 5 min).
  7. Drain on papertowel
