Ingredients

  • 2 c. sifted self-rising cornmeal
  • 1 egg
  • buttermilk (enough to make batter thin enough to pour)
  • 2 Tbsp. flour

Instructions

  1. Preheat the oven and grease a baking pan.
  2. Put the greased pan in the oven to heat before adding the batter.
  3. In a mixing bowl, combine the sifted self-rising cornmeal, flour, egg, and enough buttermilk to create a thin batter.
  4. Pour the batter into the hot, greased pan.
  5. Bake in an iron skillet at 400°F (200°C) until cooked through and golden brown.
