Ingredients

  • 1 lb. ground beef
  • 1 large onion, sliced
  • 1/2 large green pepper, cut in thin strips
  • 2 Tbsp. oil
  • 1 can tomatoes (16 oz.)
  • 1/2 c. rice
  • 1 tsp. chili powder
  • 2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Saute onion and green pepper slowly in oil. Add ground beef and cook until mixture is crumbly.
  2. Pour off drippings.
  3. Add tomatoes, rice and seasonings.
  4. Mix thoroughly.
  5. Turn into 1 1/2-quart casserole. Cover and continue cooking in a 350° oven about 45 minutes or until done. Serves 4 to 6.
