Mushroom Marinade
A tangy mushroom marinade infused with garlic, oregano, and a hint of Tabasco, perfect for adding flavor to chilled mushrooms for appetizers or salads.

Instructions
- Place all ingredients in a large bowl and beat with a fork until thoroughly mixed.
- Add the chilled and drained mushrooms into the bowl with the marinade.
- Leave the mushrooms in the marinade overnight, stirring a couple of times to ensure they are thoroughly coated.
- The next day, transfer the mushrooms and marinade to a quart jar and pour the marinade over them.
- Cut the stems off the mushrooms even with the caps.
- Drop the mushroom caps into boiling salted water with 1 tablespoon of vinegar.
- Remove the caps when the water begins to boil again.
- Drain the caps and plunge into cold ice water.
- Chill and drain the mushroom caps before adding to the marinade.
