Mushroom Marinade

A tangy mushroom marinade infused with garlic, oregano, and a hint of Tabasco, perfect for adding flavor to chilled mushrooms for appetizers or salads.

Ingredients

  • 1/2 cup olive oil
  • 1/2 cup white wine vinegar
  • 1 crushed clove garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon oregano
  • dash of Tabasco sauce

Instructions

  1. Place all ingredients in a large bowl and beat with a fork until thoroughly mixed.
  2. Add the chilled and drained mushrooms into the bowl with the marinade.
  3. Leave the mushrooms in the marinade overnight, stirring a couple of times to ensure they are thoroughly coated.
  4. The next day, transfer the mushrooms and marinade to a quart jar and pour the marinade over them.
  5. Cut the stems off the mushrooms even with the caps.
  6. Drop the mushroom caps into boiling salted water with 1 tablespoon of vinegar.
  7. Remove the caps when the water begins to boil again.
  8. Drain the caps and plunge into cold ice water.
  9. Chill and drain the mushroom caps before adding to the marinade.
