Ingredients

  • 9-inch unbaked pie shell
  • 1/3 cup sugar
  • 1 tablespoon cornstarch
  • 9 ounces crushed pineapple, not drained
  • 8 ounces cream cheese
  • 1/2 cup sugar
  • dash of salt
  • 2 eggs
  • 1/2 cup milk
  • 1/2 teaspoon vanilla

Instructions

  1. Preheat oven to 400°F.
  2. Blend 1/3 cup of sugar, cornstarch, and crushed pineapple.
  3. Cook the pineapple mixture, stirring constantly until thick and clear. Cool.
  4. In a separate bowl, blend cream cheese with 1/2 cup sugar, salt, and eggs, added one at a time.
  5. Stir the cream cheese mixture well.
  6. Add milk and vanilla, blend until smooth.
  7. Spread cooled pineapple mixture into the unbaked pie shell.
  8. Pour the cream cheese mixture over the pineapple layer.
  9. Sprinkle with chopped macadamia nuts.
  10. Bake at 400°F for 10 minutes, then reduce oven temperature to 325°F and bake for an additional 50 minutes.
  11. Allow the pie to cool before serving.
