Ingredients

  • 2 Tbsp bacon grease
  • 3 medium onions
  • 3 medium sweet bell peppers
  • 8 medium peeled tomatoes
  • 1 cup smoked ham bits
  • 2 to 3 slices loaf bread

Instructions

  1. In a large skillet, sauté chopped onions, peppers, and tomatoes in bacon grease until soft and well done.
  2. Add smoked ham bits and cook until most of the liquid is gone, about 30 minutes or more.
  3. Add bread slices one at a time, stirring constantly until the mixture reaches the desired thickness and sticks to the bread.
  4. Fill parboiled peppers placed in an 8-inch square pan with the stuffing mixture.
  5. Top the stuffed peppers with any kind of cheese.
  6. Place in a preheated oven at 400°F until the cheese melts.
