Ingredients

  • 1 gallon water
  • 1 quart 5% vinegar
  • 1/2 cup canning salt
  • 10 to 12 pounds pickling cucumbers
  • fresh dill
  • onion
  • garlic
  • dried red pepper (optional)

Instructions

  1. Mix water, vinegar, and canning salt in a pot and bring to a rolling boil.
  2. Prepare jars by heating them in a dishwasher or on the stove.
  3. Stuff jars with fresh dill, 1/8 sliced onion, 1 large garlic clove, cucumbers, and dried red pepper if desired.
  4. Pour the boiling water mixture into the stuffed jars.
  5. Seal the jars and hot water bath them for 15 minutes.
