Navy Bean Pie

Ingredients

  • 1 c. mashed navy beans
  • 1 1/2 c. sugar
  • 1/2 c. whole milk
  • 4 egg yolks
  • dash of nutmeg
  • 2 Tbsp. flour
  • 1 stick butter or margarine
  • 1 Tbsp. vanilla

Instructions

  1. Preheat oven to 350°.
  2. Cook beans well; drain and mash through colander or food mill.
  3. Measure the mashed beans and add sugar and milk.
  4. Strain this mixture through a sieve.
  5. Add egg yolks, nutmeg, flour, butter and vanilla.
  6. Mix well and beat until very smooth; pour into 9-inch unbaked pie shell.
  7. Bake for 30 minutes or until firm.
