Ingredients

  • 16 oz. dry Great Northern beans
  • 1 to 2 lb. smoked ham hock or smoked ham shanks
  • 14 - 16 oz. can diced tomatoes with juice
  • 1/2 to 3/4 cup dried onion flakes
  • 6 cups hot water
  • salt and pepper to taste

Instructions

  1. Rinse and sort the beans in a large pot.
  2. Add 6 to 8 cups hot water to 1 pound of beans, bring to a rapid boil, and boil for 2 minutes.
  3. Remove from heat, cover, and let stand for 1 hour.
  4. Drain soak water from beans, rinse, and drain again.
  5. Add the soaked beans, smoked ham hock or shanks, diced tomatoes with juice, dried onion flakes, hot water, salt, and pepper to a large pot.
  6. Bring to a boil, then reduce heat and simmer until beans are tender and flavors meld, about 1.5 to 2 hours.
