Ingredients

  • 1 gal. cucumbers, cut in strips
  • 1 gal. water
  • 1 c. salt
  • 2 Tbsp. lump alum
  • 1/2 tsp. turmeric
  • 12 c. sugar
  • pickling spice

Instructions

  1. Mix salt with water to create a brine.
  2. Pour the salt water over the cucumbers and let stand for 3 days; then drain off the salt water.
  3. Rinse the cucumbers three times with fresh water.
  4. Add lump alum to a pitcher of water and pour over the cucumbers.
  5. Let stand for 24 hours, then drain, leaving the cucumbers in the container.
  6. Rinse the cucumbers three times again.
  7. Fill the container with undiluted vinegar to cover the cucumbers.
  8. Let stand for 7 days.
  9. Drain off the vinegar but do not rinse the cucumbers.
  10. Add 3 cups of sugar, turmeric, and enough pickling spice tied in a cloth to form a ball the size of a walnut; drop into the container with the cucumbers, sugar, and turmeric.
  11. Add 3 cups of sugar every day for 3 days, then serve when desired.
