Ingredients

  • 1 medium head cabbage
  • 1 onion
  • 2 stalks celery
  • 1 green pepper
  • 2 carrots
  • 1/2 cup vinegar
  • 1/2 cup water
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon celery seed

Instructions

  1. Shred the cabbage and place it in the refrigerator to keep crisp.
  2. Chop the onion, celery, green pepper, and carrots fairly fine.
  3. Add the chopped vegetables to the shredded cabbage.
  4. In a saucepan, combine vinegar, water, sugar, salt, turmeric, and celery seed.
  5. Bring the mixture to a boil.
  6. Pour the hot dressing over the vegetables and mix well.
  7. Cover and refrigerate overnight to allow flavors to meld.
  8. Serve chilled as a refreshing side salad.
