Ingredients

  • 1 lb. red potatoes, cut into 1 inch pieces
  • 2 Tbsp. margarine or butter
  • 1/2 (10 oz.) pkg. frozen broccoli cuts or florets, thawed
  • 1/2 tsp. cracked black pepper
  • 1/4 tsp. salt
  • 1/4 c. shredded Cheddar cheese

Instructions

  1. In a bowl, cook unpeeled potatoes, margarine, and 2 tablespoons water, covered, on High for 10 to 12 minutes, until tender.
  2. Stir twice during cooking.
  3. With a masher, mash lightly.
  4. Stir in the broccoli, black pepper, and salt.
  5. Top with shredded Cheddar cheese.
  6. Melt the cheese in the microwave for 1 1/2 to 2 minutes.
