Ingredients

  • 3 egg whites
  • 1 cup sugar
  • 1 tablespoon vanilla
  • 1 cup pecan pieces
  • 22 round buttery crackers (Ritz), crumbled
  • 1 pint whipping cream or Cool Whip

Instructions

  2. Gradually add sugar, beating constantly.
  3. Add vanilla and beat just to mix.
  4. Fold in pecan pieces and crumbled crackers.
  5. Pour mixture into a well-greased pie plate.
  6. Microwave on High for 4 1/2 to 5 minutes until set.
  7. Allow to cool, then top with whipped cream or Cool Whip.
