Ingredients

  • 2 cups bean soup mix
  • 2 quarts water
  • 1/2 to 1 pound ham, diced
  • 1 large onion, chopped
  • 1 to 2 cloves garlic, minced
  • 3/4 teaspoon salt
  • 2 large cans or jars tomatoes, undrained
  • 1 can chopped green chilies, drained
  • dash of cumin
  • pinch of basil

Instructions

  1. Sort and wash bean soup mix.
  2. Place the beans in a Dutch oven.
  3. Cover with water 2 inches above the beans and soak overnight.
  4. Drain the beans.
  5. Add water and all remaining ingredients to the Dutch oven.
  6. Cover and bring to a boil.
  7. Reduce heat and simmer about 2 hours, or until beans are tender, stirring occasionally.
  8. Adjust seasonings to taste.
  9. Serve hot with soup bowls and French bread.
