Nippy Pork Chops

Ingredients

  • 6 lean pork chops (3/4-inch thick)
  • prepared mustard
  • 1/4 c. flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. oil
  • 1 (10 1/2 oz.) can chicken rice soup

Instructions

  1. Spread pork chops with a thin coating of mustard.
  2. Combine flour, salt and pepper in a bag.
  3. Shake chops in the bag to coat with flour, then brown in oil in a heavy skillet.
  4. Place chops in baking dish.
  5. Cover with soup.
  6. Cover.
  7. Bake in moderate oven (350°) for 60 minutes.
  8. Place chops on a platter.
  9. Spoon rice on each chop.
  10. Add 1 cup of water to liquid; bring to a boil. Thicken it.
  11. Serve as gravy over mashed potatoes.
