Ingredients

  • 2 eggs, separated
  • 2/3 cup sugar
  • 1 quart milk
  • 1 1/4 to 1 1/2 cups saltine crackers, coarsely broken
  • 3/4 cup coconut
  • 1 teaspoon vanilla

Instructions

  1. Beat the egg yolks and sugar together in a bowl.
  2. Pour the mixture into a saucepan and heat gradually.
  3. Add milk, stirring constantly until well combined.
  4. Add crushed saltine crackers and coconut; cook until the mixture thickens.
  5. Pour the thickened pudding into a baking dish.
  6. In a separate bowl, add 3 tablespoons of sugar to the egg whites.
  7. Beat the egg whites until stiff peaks form.
  8. Spread the beaten egg whites over the pudding.
  9. Brown the topping under a broiler until golden.
