Ingredients

  • 2 Tbsp. cornstarch
  • 3/4 c. sugar
  • 1 1/2 c. water
  • 1 (6 oz.) pkg. cherry flavored gelatin
  • 1 qt. (4 c.) fresh or frozen chopped red tart cherries
  • 2 c. whipped topping
  • 2 pie shells (8-inches each), baked

Instructions

  1. Bring cornstarch, sugar, and water to a boil over low heat. Boil about 2 minutes until thick and clear.
  2. Stir in cherry flavored gelatin until dissolved.
  3. Add cherries to the mixture.
  4. Chill until the mixture starts to set, then fold in whipped topping.
  5. Pour the filling into baked pie shells.
  6. Chill the pies until set before serving.
