Ingredients

  • 12 medium cucumbers
  • 1 onion
  • 1 red pepper or 1 jar pimentos
  • 1 green pepper
  • 1/4 cup salt
  • 2 cups white vinegar
  • 2 1/2 cups sugar

Instructions

  1. Slice cucumbers, onion, and peppers into a bowl.
  2. Add salt and let stand for 3 hours or overnight.
  3. Rinse the vegetables well.
  4. Make a brine of white vinegar and sugar.
  5. Pour the brine over the pickles.
  6. Keep refrigerated.
  7. Store in any jar with a rubber seal.
