Ingredients

  • 4 tsp dry yeast
  • 2/3 cup lukewarm water
  • 2 tsp honey
  • 5 cups whole wheat flour
  • 3 tbsp molasses
  • 2/3 cup lukewarm water
  • 1/2 tbsp salt
  • 1/3 cup wheat germ

Instructions

  1. Sprinkle yeast over lukewarm water and add 2 teaspoons honey. Leave to 'work' while preparing the dough.
  2. Warm the whole wheat flour in the oven at 250°F for 20 minutes.
  3. Combine molasses with 2/3 cup water.
  4. Combine the yeast mixture with the molasses mixture.
  5. Stir this into the warmed flour, then add salt, wheat germ, and 1 1/3 cups water.
  6. Dough will be sticky.
  7. Butter the loaf pan.
  8. Turn the dough into the pan.
  9. Smooth the dough in the pan with a spatula held under cold water.
  10. Sprinkle sesame seeds over the top of the loaf.
  11. Leave to rise in a warm, draft-free place until it reaches the top of the pan.
  12. Preheat oven to 400°F.
  13. Bake for 30 to 40 minutes until the crust is brown and sides are firm.
  14. Set the pan on a rack to cool for about 10 minutes, then remove the bread.
  15. Cool completely before serving.
