Ingredients

  • 1 lb. fresh chicken livers
  • 2 white onions
  • 1/3 cup fresh chicken fat
  • salt and pepper
  • 2 hard-boiled eggs

Instructions

  1. Saute the chicken livers and half of the diced onions in a heavy frying pan until the onions are golden brown and the livers have turned light brown.
  2. Transfer the cooked livers and onions into a chopping bowl.
  3. Add salt, pepper, and the remaining raw diced onions.
  4. Chop together until coarse and blended, or put through a food grinder.
  5. Do not puree the mixture.
  6. Add the chopped hard-boiled eggs.
  7. Refrigerate and serve with crackers or rye bread.
