Ingredients

  • 1 large onion
  • 1 cup Uncle Ben's rice
  • 2 chicken breasts
  • 1 cup beans

Instructions

  1. Boil chicken breasts until tender with some chopped onion.
  2. Remove chicken from the broth, debone, and set aside.
  3. Strain the broth and keep it boiling.
  4. Soak the rice in enough water to cover while deboning the chicken.
  5. Add beans to the strained broth if desired, and cook until beans are tender.
  6. Combine the cooked rice with the broth and chicken, then simmer until rice is fully cooked and flavors meld.
