A delicate Norwegian fish mousse with a smooth, creamy texture and subtle flavors of fish, nutmeg, and seasonings, ideal for elegant appetizers or light meals.

Ingredients

  • 1 1/2 lb. fillets of fish (haddock, cod or pike)
  • dash of nutmeg
  • 1 1/3 c. milk
  • 2 Tbsp. salt
  • 1 tsp. pepper
  • 1 1/2 Tbsp. cornstarch
  • 1 1/2 c. cream

Instructions

  1. Dry the fish fillets and put them through a blender until finely pureed.
  2. Work the fish puree until smooth. Stir in cornstarch, salt, pepper, and nutmeg.
  3. Gradually add milk and cream to the mixture, stirring until it reaches a heavy cream consistency.
  4. Pour the mixture into an 8-inch buttered and breaded pudding mold; cover with foil.
  5. Place the mold in a pan with boiling water and cook at 375°F for 45 to 60 minutes or until the mousse is set.
  6. Add more water to the pan as needed during cooking.
  7. Unmold the mousse onto a hot platter and garnish with parsley, sautéed mushrooms, or shrimp.
  8. Serve with browned butter or shrimp sauce.
