- Dry the fish fillets and put them through a blender until finely pureed.
- Work the fish puree until smooth. Stir in cornstarch, salt, pepper, and nutmeg.
- Gradually add milk and cream to the mixture, stirring until it reaches a heavy cream consistency.
- Pour the mixture into an 8-inch buttered and breaded pudding mold; cover with foil.
- Place the mold in a pan with boiling water and cook at 375°F for 45 to 60 minutes or until the mousse is set.
- Add more water to the pan as needed during cooking.
- Unmold the mousse onto a hot platter and garnish with parsley, sautéed mushrooms, or shrimp.
- Serve with browned butter or shrimp sauce.
