Not Fried Eggplant

Instructions
- Slice eggplant into 1/2-inch slices, then those into inch by 4-inch strips.
- Toss the strips in oil, then into a mixture of seasoned bread crumbs and Parmesan or Romano cheese, then salt and pepper.
- Put them on a foil lined cookie sheet and bake them in a preheated oven at 375° for 30 minutes until crisp and golden.
