  • 2 1/2 to 3 1/2 lb. chicken, cut up
  • 1/4 cup mayonnaise
  • 1 package dry onion soup mix (half 2 3/4 oz. box)
  • 1/2 cup bottled Russian dressing
  • 1 cup apricot-pineapple preserves

Instructions

  1. Arrange the chicken pieces in a 12 x 8 x 2-inch dish, placing the thickest, meatiest pieces on the outside edges.
  2. In a small bowl, stir together mayonnaise, dry onion soup mix, Russian dressing, and apricot-pineapple preserves.
  3. Spread the mixture evenly over the chicken, ensuring each piece is coated.
  4. Cover the dish with wax paper and microwave on high for 18 to 22 minutes, rotating the dish 1/2 turn after 10 minutes.
  5. Allow the chicken to stand for 5 to 10 minutes before serving to absorb the flavors of the sauce.
