Notched potatoes are a hearty baked dish featuring tender potatoes filled with a savory butter and onion mixture, perfect for comforting family dinners or casual gatherings.

Ingredients

  • 8 baking potatoes
  • 1/2 cup butter or margarine
  • 1 medium onion, chopped
  • 3/4 teaspoon paprika
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon Tabasco sauce

Instructions

  1. Notch a large square out of the top of each potato.
  2. Mix the remaining ingredients (butter, chopped onion, paprika, salt, Tabasco sauce) and spoon into the potatoes.
  3. Replace the notched top onto each potato.
  4. Cover with aluminum foil and bake for 1 hour at 425°F (220°C).
