- Add one egg at a time, beating well after each addition until the mixture is smooth and glossy.
- Pour the batter into well-greased muffin tins, filling each about half to two-thirds full.
- Sprinkle the tops with sugar.
- Bake in a preheated oven at 375°F (190°C) for about 20 minutes, or until golden and puffed.
- Do not open the oven door during baking to prevent deflation.
