Ingredients

  • 1/2 cup butter
  • 1 cup milk
  • 3/4 cup flour
  • 4 eggs

Instructions

  1. Heat milk and butter together until they come to a boil.
  2. Add flour all at once and beat vigorously with an electric mixer until the mixture forms a smooth dough and pulls away from the sides of the pan.
  3. Remove from heat and let cool slightly.
  4. Add one egg at a time, beating well after each addition until the mixture is smooth and glossy.
  5. Pour the batter into well-greased muffin tins, filling each about half to two-thirds full.
  6. Sprinkle the tops with sugar.
  7. Bake in a preheated oven at 375°F (190°C) for about 20 minutes, or until golden and puffed.
  8. Do not open the oven door during baking to prevent deflation.
