Nutty Chocolate Cups combine creamy marshmallow and whipped cream fillings with crunchy cookie crumbs, topped with rich milk chocolate and cashews, perfect for a decadent treat or special occasion.

Ingredients

  • 18 chocolate wafers
  • 3 Tbsp. butter
  • 1/2 c. half and half
  • 2 c. miniature marshmallows
  • 11 1/2 oz. milk chocolate chips
  • 1 c. heavy cream

Instructions

  1. In a small bowl, combine chocolate wafer crumbs and melted butter; mix well.
  2. Spoon 1 tablespoon of the crumb mixture into each of 12 foil-lined muffin cups; press firmly to form the base.
  3. Set aside the remaining cookie crumbs for topping.
  4. In a medium saucepan over low heat, combine half and half, 1 2/3 cups of marshmallows, and milk chocolate chips.
  5. Stir until the chocolate chips are melted and the mixture is smooth.
  6. Remove from heat and cool completely.
  7. Fold in whipped cream, remaining 1/3 cup of marshmallows, and cashews.
  8. Pour 1/3 cup of the chocolate mixture into each prepared muffin cup on top of the cookie crust.
  9. Sprinkle the remaining cookie crumbs over the filled cups.
  10. Freeze until firm, about 1 hour.
