Oatmeal Griddle Cakes

Ingredients

  • 3 c. buttermilk
  • 1 c. flour
  • 1 tsp. baking soda
  • 2 eggs, well beaten
  • 1 c. rolled oats
  • 2 Tbsp. sugar
  • 1 tsp. salt

Instructions

  1. Mix buttermilk and rolled oats in a bowl.
  2. Cover and refrigerate 4 hours or overnight, stirring once or twice.
  3. Sift dry ingredients together and set aside.
  4. Add buttermilk mixture to well beaten eggs and blend thoroughly.
  5. Make a well in center of dry ingredients and add liquid all at one time.
  6. Stir only until blended.
