Ingredients

  • 1 1/2 c. oatmeal
  • 1/2 c. flour
  • 1 tsp. salt
  • 1 Tbsp. sugar
  • 1 tsp. baking soda
  • 3 Tbsp. oil
  • 2 c. buttermilk
  • 1 egg, beaten
  • 1 tsp. vanilla
  • 1/2 tsp. maple flavoring

Instructions

  1. Combine the first 5 ingredients and mix well.
  2. Add remaining ingredients.
  3. Let stand at room temperature for 30 minutes.
  4. Cook over moderate heat.
  5. Serves 4.
