Okie Enchiladas

Ingredients

  • 1 pound Ground Beef
  • 1/2 chopped onion
  • 2 16 oz. cans cream of chicken soup
  • 1 4 oz. can diced green chilies (drained)
  • 1 can water
  • 2 cups grated cheddar cheese
  • Salt & Pepper
  • Flour tortillas

Instructions

  1. Brown ground beef and onion.
  2. (Salt & pepper to taste.)
  3. In a separate pan add soup, water and chilies.
  4. Heat until hot.
  5. If soup is too thick you can add more water but don't make it too thin. Drain grease from beef mixture.
  6. Fill tortillas with beef mixture and some cheese.
  7. Roll and set in 9 X 13 baking pan.
  8. (Coat bottom lightly with oil to keep enchiladas from sticking.)
  9. Pour soup sauce over enchiladas to coat and sprinkle with cheese.
  10. Bake at 350 for about 20 minutes or until everything is heated through. 8 - 10 servings.
