Ingredients

  • 6 cups sugar
  • 2 cups lite cream
  • 1/2 teaspoon soda
  • 1/2 pound butter
  • 1 teaspoon vanilla
  • 4 to 5 cups whole pecans

Instructions

  1. Measure 2 cups of sugar into a heavy skillet.
  2. Cook over low heat, stirring with a wooden spoon until it melts and becomes a light brown syrup, being careful not to burn it.
  3. Mix the remaining 4 cups of sugar and the lite cream into a large, deep, heavy kettle.
  4. Bring the mixture to a boil over low heat, then increase to a fast boil.
  5. Pour the melted sugar from the skillet into the large kettle in a thin stream, stirring continuously to blend.
  6. Cook and stir until the mixture reaches a firm ball stage (244° to 248°).
  7. Remove from heat.
  8. Add soda and stir vigorously as it foams.
  9. Add butter and stir until melted.
  10. Set aside at room temperature for 20 minutes.
  11. Add vanilla and beat until the candy becomes thick with a dull, glossy appearance.
  12. Fold in pecans.
  13. Pour into a buttered 11 x 9-inch dish.
