- Place okra in a lightly greased 1 1/2-quart baking dish; drizzle with oil. Top with tomatoes and green chiles, onion and bell pepper; sprinkle with salt and pepper. Cover loosely with aluminum foil. Bake at 400°, stirring occasionally, 1 hour. Stir together potato chips and breadcrumbs; sprinkle over casserole. Bake, uncovered, 15 more minutes or until lightly browned. Serve over rice, if desired. YIELD: 6 servings.
