Ingredients

  • 1 lb. soup beans
  • 1/3 cup brown sugar
  • 1 teaspoon dry mustard
  • 1/2 cup ketchup
  • 1/2 cup bean broth
  • 6 strips bacon
  • chopped onion (optional)

Instructions

  1. Soak the soup beans overnight.
  2. Rinse beans thoroughly and drain.
  3. Cover beans with water and cook until tender.
  4. Drain beans and save the bean broth.
  5. Mix brown sugar and dry mustard together.
  6. Add ketchup and bean broth to the sugar and mustard mixture.
  7. Blend together to make the sauce.
  8. Grease a 9 x 13-inch pan.
  9. Add half of the beans and about 3 strips of bacon to the pan.
  10. Add the remaining beans and the remaining bacon strips.
  11. Pour the ketchup sauce over the entire pan.
  12. Use a knife to mix the sauce around the beans.
  13. Add chopped onions, if desired.
  14. Bake for 1 1/2 hours at 300°F.
