Ingredients

  • 1 lb. pork sausage (Bob Evans mild)
  • 1 cup chopped celery
  • 1/2 cup chopped onion
  • 1/4 lb. (1 stick) butter
  • 1 loaf white bread, cubed and dried
  • 1/4 loaf whole wheat bread, cubed and dried
  • 2 eggs
  • Milk
  • Poultry seasoning
  • 1 can mushrooms, stems and pieces

Instructions

  1. Fry the pork sausage in a skillet until cooked through. Pour off the grease and drain on paper towels.
  2. In the same skillet, melt the butter and add chopped celery and onion. Fry until the celery is soft.
  3. Pour the cooked celery and onion mixture over the cubed and dried bread and whole wheat bread.
  4. Add the cooked sausage to the bread mixture.
  5. In a separate bowl, whisk together the eggs and milk, then pour over the bread mixture.
  6. Add poultry seasoning to taste and mix well.
  7. Chop the canned mushrooms finely and add to the mixture.
  8. Stuff the prepared mixture into the turkey or serve as a side dish.
